Hats!

With the weatherman predicting the possibility of snow this weekend (SNOW?! in SEATTLE!?!) and the low on Monday may get down to 25 degrees, I've begun to dig out all my winter hats again. This has been my staple for the past year (and my husband wearing the hat I knitted for him!):



But I'm always on the hunt something new, something better! Here are some options:

Chicken Taco Chili

Tonight is Taco Tuesday and my crockpot is on the kitchen cooking my Chicken Taco Chili to perfection!

Ingredients
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 package of frozen corn
  • 2-3 cloves of garlic, minced
  • 1 can of tomato sauce
  • 2 cans of diced tomatoes
  • 1 can of black beans
  • 1 can of kidney beans
  • Packet of taco seasoning
  • 1 tsp cumin
  • 1 tsp oregano
  • 3 chicken breasts

Instructions

Add all ingredients to your crockpot, laying the chicken breast on top of everything else. Cover and cook on low for 10 hours. 30 minutes before serving take the chicken breasts out and shred them. Mix back into the chili, and let cook for another 30 minutes. Serve with tortillas, cheese, shredded lettuce, tomatoes and guacamole!

Serves 8, 5 points/serving (not including tortilla, cheese, and other add on's).

2011 Calendars

It's that time of year again when I start thinking about plans for the new year (only 1.5 months away!). I got lots of use out of my day planner this past year, with all the wedding related appointments, I'll probably need another one this year, just to stay in good habit.

Must have knitting supplies

If I had more free time I'd use every last minute of it knitting. If I had unlimited money I would buy a house and have a room entirely dedicated to storing all my yarn and knitting supplies, and I would have two rocking chairs. One would be out on the front porch, the other would be placed in front of our fireplace. I would then spend days working on an endless list of projects, creating heirlooms for every member of my family! It's something to aim for...

Planning Ahead

Every year I tell myself to plan well in advance for Christmas. Don't be that crazed person who uses all of their December paycheck to buy last minute, cookie cutter gifts. Why is it I never listen to my own advice?!

This year I'm determined to make a change! Over the past few months I've been scouting out various tutorials on some of my favorite sites and come up with some pretty awesome projects. Now its just a matter of making some time to accomplish them...

Daily goals

  • I will eat a healthy breakfast (including a fruit!) before leaving the house every morning.

Before

Today is the beginning of the rest of my life. I will begin a new journey that will guide me to become more healthy, more fit, more happy and THIN! My best friend has been on Weight Watchers for the past several months and has encouraged me to join her once all the wedding mayhem has stopped. Mark and I have been back from Paris for less than a week, and I've been looking forward to my first WW meeting for a long while. I am ready!

This is my 'Before' photo. It was taken the morning of my wedding, while I was getting my makeup done and my hair was setting in curls. I think it is a beautiful photo. The lighting is wonderful, I'm happy, I look pretty, and I look fat. It's that simple. This is me at my heaviest: 302 lbs. (Yes interwebs, I'm publicly announced my true weight! I refused to be ashamed!)



Something has clicked (finally!) inside me, allowing me to (finally!) accept that I NEED to lose weight. And this time it's for the right reason: I'm doing this for myself! I want to be able to go shopping at any store without frustration. I want to be able to walk up a hill or flight of stairs and not be winded. I want to be able to one day have kids and be able to play with them! I'm ready for life and I'm ready for this journey. Bring it!
